Chicken Curry - Malaysian style.

Homemade Curries, Lamb stews, Fried Rice, Soups, Grilled Lamb Chops, Stir Fried Vegetables and many more are easy to cook for beginners. Here are 2 recipes I hope you will enjoy.

Fresh prawns, crabs, squids and other seafood dishes will be added to my collection for you to try out. Seafood are my favourite food because I love it.



Malaysian Curry Chicken.

Here is a recipe for the Malaysian Curry Chicken. It is my own style which is not very spicy and children will love it.

Ingredients.
1. 1 medium size chicken (1kg.)- cut into small pieces.
2. One large onion, chopped or grated.
3. 3 medium size tomatoes- cut into several small pieces.
4. Medium size potatoes- 4 pieces (cut into medium sizes)
5. Curry leaves or coriander leaves (Chinese parsley)
6. 150-200 gms. meat or chicken, curry powder.
7. Garlic - 1 whole bulb- peeled and finely chopped.
8. Chicken stock 1 cube.
9. Coconut milk (2 coconuts). Packet coconut milk could be used.
If not available, the top fresh cream part from a pint of fresh milk (250 mls.)
10. Water 250 mls.

Method.
Heat up 3 tablespoon of cooking oil in a pot (or Wok). Put in chopped garlic and stir fry for 2 mins. Add in 200 gms. curry powder and fry for a further 2 minutes.
Add in chopped onions, chicken, potatoes and tomatoes and fry for about 10 minutes under medium heat.

Pour in coconut milk, 250 mls. water, curry leaves (or coriander leaves), chicken stock and salt to taste.

Simmer under low-medium heat for 20 minutes, remembering to constantly stir the ingredients every 5 minutes. The curry should be ready when the potatoes and chicken are soft and tender.

Best served with roasted peanuts and fried anchovies.
Servings for 6 people.
